Madeleines are one of my favorite little cakes! I love the half cookie half cake quality of them, the original snack cake am I right? Back in a world where I could effortlessly waltz into a cafe for an espresso drink prepared by a skill professional other than Reuben, I couldn’t resist purchasing a madeleine or three if I saw them in the display case. They are buttery, lightly, tender, perfectly sweet, and taste so good with tea or coffee!

 I’ve put off making madeleines myself because I never couldn’t quite convince myself to get a madeleine pan. But after over a year of developing cakes, cookies, and breads for my cookbook I needed to switch things up a bit. I get restless making the same recipes over and over again.

My friends over at Sur La Table were so kind to send over a madeleine mold and some other beautiful items so I was ready to kick off my Madeleine journey! Turns out, they are quite simple to make but I did have to eat my way through a few batches of slightly deflated madelienes to get to the perfect little cake. Even the flat batches were delicious. A puffy “hump” on the back of well mixed madeleine is a telling sign that you made them right!

The main elements of madeleines are quality butter, sugar, well whipped eggs, and flour. Pretty simple! I had to put my own twist on madeleines, you know me! I’ve been loving Genmaicha tea lately, it’s a blend of green tea with roasted puffed brown rice. It’s my go-to pick me up in the afternoons. I infused butter with the tea to incorporate into madeleines and it gives them such a wonderfully roasty and gently floral flavor! The touch of honey in the batter also compliments the flavor of the tea so well!

The recipes ended up making just 10 madeleines, which is perfect if you’re in a small bubble just like me. But it scales up really nicely, so you can make a double or even triple batch if you want to! The 10 madeleines barely made it past a day in our house…
