Spam and Egg Croissant Breakfast Sandwiches Blog Post

That probably taught you a lot about me 😅 or explains why Spam Musubi is one of my favorite snacks. I had a craving for spam and wanted to eat it in something other than noodle soup, fried rice, or musubi. The most adorable mini croissants caught my eye the other day and they were conveniently sized for a slice of spam! I knew they were destined to become the best breakfast sandwiches!
Spam. Egg. Kimchi. Mini Croissants. What else could you need?! What’s wonderful about this recipe is that it makes 6 sandwiches all on a single sheet pan! So it’s perfect if you’re making breakfast for a group or stock up on them in your fridge for a quick breakfast that warms up in minutes!
A Sheet Pan Situation
I used to turn my nose up at sheet pan recipes. They get a bad reputation for being basic and uninspiring. But so many of my favorite meals are made completely on a sheet pan: baked tofu with roasted broccoli, crispy chicken thighs, salted chocolate chip cookies (yes, that’s a meal), and these croissant breakfast sandwiches!
I cook the components of this breakfast sandwich in 2 phases. First I arrange the kimchi and spam in two neat rows. They go in the oven for a few minutes, just until they start to brown around the edges. This also warms up the sheet pan, which helps with cooking our eggs later. For phase two, I add a layer of cheese onto each piece of spam (loooove how the cheese fits perfectly on there), layer the croissants, and then brush the remaining space with oil and crack some eggs on there. The pan goes right back into the oven until the eggs are jammy and the croissants are toasty. I’m only using 4 eggs and this makes 6 sandwiches, so once you take the pan out of the oven I like to break the egg yolk and marble them so each sandwich gets some jammy yolk.

Let’s Assemble!
As you’ve probably guessed, assembling the sandwiches is pretty straightforward! I start by slicing the croissant in half, adding a layer of warm kimchi, a slice of spam and cheese, and finally a section of the jammy eggs. I like to score the egg section into 6 equal-ish portions with the edge of a spatula first! If you want, you can garnish with some green onions and togarashi. I always need ketchup with my breakfast sandwiches, so that’s waiting in the wings too.
If you want to save some of these for later, I like to wrap them in foil and store them in an airtight container or bag in the freezer. You can warm them back in the oven for a few minutes until warm and toasty ☺️
Spam and Egg Croissant Breakfast Sandwiches
Makes 6
Ingredients:
2 cups kimchi
6 slices of spam, about 1/4” thick
3 american cheese slices, cut in half
6 mini croissants
1 tbsp olive oil
4 large eggs
Green onions, for topping
Togarashi, for topping
Steps:
Preheat the oven to 400 degrees.
Arrange kimchi into a single row on the baking sheet. Arrange another row of spam next to it. Bake until the edges of the spam and kimchi are just starting to brown, 8 to 10 minutes.
Take the baking sheet out and top the spam with cheese. Arrange the croissants in a row, shingling them if needed. Brush olive oil over the remaining space on the baking sheet and crack the eggs onto the sheet. Bake again until cheese is melty and eggs are jammy, about 10 minutes.
Remove from the oven. Break up the egg yolks with a fork so that the jammy yolk is marbled across the egg whites. Cut the egg into 6 equal-ish sections with the edge of your spatula. Assemble the breakfast sandwiches by slicing the croissants in half and stuffing with kimchi, spam, and egg. Top with green onions and a sprinkle of togarashi.
Storage notes: assembled breakfast sandwiches can store in the freezer for up to 3 months. Just wrap in foil and store in an airtight container. To reheat, warm back up in a 350-degree oven for 10 to 15 minutes. Otherwise, unwrap the foil and microwave for about 3 minutes.
